Fresh tuna
Our wild bluefin tuna comes from Tarifa, Spain. Tuna from the Almadrabas owes its name to the way in which it is caught. This technique has been used in Spain, Morocco, Portugal and Italy since pre-Roman times and consists of sinking a labyrinth of nets to catch the tuna during its migration. This non-aggressive, traditional procedure respects the species and ensures the high quality of the product. This tuna meat is dark red in colour (lomo) or light pink with fatty veins running through it (ventresca). These are two exceptional cuts of tuna.
